I delivered my neighbor's coconut cake this morning. It is a cake that has to sit at least 3 days before you serve it. I iced it yesterday morning so it would have plenty of time to sit and soak up all that amazing flavor from the icing. This is my grandmother's recipe and yes, this is one that I cry out in the night for. I'm "swallering hard" (as Paula Dean would say) just thinking about it.
